This is a good way to preserve celery that may otherwise be forgotten and thrown out. Wash and remove ends and leaves of celery stalks. Slice 1/4-inch thick. Spread on dehydrator trays in a single layer. Dehydrate at 130o for 6 to 8 hours or until crisp dry. Remove from trays and dry heat process in canning jars for longer shelf life.

Celery leaves may be dried by spreading them on lined dehydrator trays. Dehydrate at 95o until completely dry, about 2 or 3 hours. Store in airtight jars.
