Bacon Ranch Potato Salad on a plate

Boxes of au gratin potato mixes are a good source for the dried potatoes in this easy salad. Be sure to use a good brand of Ranch salad dressing, such as Hidden Valley Ranch, for the best flavor.

BACON RANCH POTATO SALAD (Pantry Cooking II)

6 cups water
3 cups sliced dried potatoes (shake potatoes down in the measuring cup to fill the 3 cups completely)
1 tablespoon dried onion
1/4 cup real bacon pieces
1/2 cup good quality Ranch salad dressing
Dried chives

Bring water to a boil in a large saucepan. Add potatoes and onions; boil about 15 minutes or until potatoes are tender. Drain and rinse with cold water. Allow potatoes and onions to drain about 10 minutes. Pour potatoes and onions into a bowl, add bacon, and stir in salad dressing until potatoes are well coated. Refrigerate for at least one hour before serving. Stir. Sprinkle with dried chives. Serves 4 to 6.
