Baked Beans and Spam in a casserole dish

Put this in the oven to bake while you fix the rest of your food for your summer cookout. Or serve it in the fall as a main dish. It goes great with Mashed Potato Salad (Pantry Cooking: Unlocking Your Pantry’s Potential, page 92) and pickles.

BAKED BEANS AND SPAM (Pantry Cooking with Home Preserved Foods)

2 cans (16 ounces each) pork and beans
1 pint pinto beans or 1 can (15 ounces) pinto beans, rinsed and drained
1/3 cup catsup
1/3 cup molasses
1/4 cup packed brown sugar
1/4 cup dried onion
2 tablespoons Dijon mustard
1 can (12 ounces) Bacon Spam, sliced into 8 slices and then in half lengthwise

Thoroughly mix all ingredients except Spam. Pour into a 2-1/2 quart casserole. Lay sliced Spam on top. Bake uncovered, at 350o for 1-1/2 hours.
