Half pint jars of rhubarb sauce

Summertime is rhubarb time.

I found a recipe for Rhubarb or Victoria Sauce in the Ball Blue Book: Guide to Preserving when I was looking for another option for preserving rhubarb. We love to put rhubarb sauce on top of pork chops. My daughter’s family puts it on grilled hamburgers. It would be good on chicken, too. Use it like barbecue sauce or chutney. It has rhubarb, raisins, onions, brown sugar, vinegar, and sweet spices in it. I think you will like it!

Look for the best version of the recipe in the most recent (2017) edition (37th) of the Ball Blue Book. It’s the easiest version to understand and the most thorough in its instructions.
