Another way to use Spam! Be sure to grate the Spam on the large holes of the grater and then cook the grated Spam until brown and crispy. The pieces will stay separated if you do. Use whatever toppings you have either fresh or shelf stable.

SPAM TACOS (Pantry Cooking with Home Preserved Foods)

1 can (12 ounces) Low Sodium Spam
2 teaspoons Tex-Mex Seasoning
1/3 cup salsa
Taco shells or tortillas
Toppings, as desired

Grate Spam on the large holes of a grater. In a medium or large skillet, cook grated Spam on medium-high heat until the edges start to brown and get crisp. Stir in seasoning and salsa. Reduce heat and heat through. Spoon mixture into the center of taco shells or tortillas. Top with shredded cheese, chunky salsa, sliced olives, sliced jalapenos, or other desired toppings. Makes 10 tacos.
