I don’t normally post recipes here that I did not create but this is our absolute favorite granola, and all the ingredients are shelf stable. That means I can make it anytime (as long as I have been keeping tabs on my stock!)

Make sure you use regular rolled oats and not quick oats.

Pistachios can be raw, roasted, salted, or unsalted.

I like coconut chips instead of flaked coconut.

Pumpkin seeds can be salted or unsalted.

I cut the salt down to 1 teaspoon. (Use table salt and not kosher salt or the very last of your granola will be really salty!)

I usually bake for 35 minutes and stir every 10 minutes (except after the last 5!).

It’s a perfect Mother’s Day treat!
